Copalli is pure organic single estate rum made from just three ingredients sourced from the estate farm: home grown, organic non-GMO, heirloom sugar cane juice, pure canopy water from the jungles surrounding the distillery and local organic yeast.

Double distillation of sugarcane juice, use of exclusively full-bodied pot still distillation, and ageing in American Oak used bourbon barrels creates a rich sweet rum that tastes delicious neat and is a powerful and flavourful base for your favourite rum cocktail.

A rich, powerful and flavourful spirit which represents a true taste of the farm terroir in Belize.

Copalli Cacao Rum

Organic cacao from the Copal Tree Estate adds richness and intensity to Copalli White Rum. Great for cocktails, but just as good for sipping neat.

For Copalli Cacao Rum, handpicked, organic cacao is roasted on site. These cacao nibs are infused in unaged column-still rum, bringing richness to the white rum, true to style…. no added sweeteners or additives are necessary.

Perfect to savour on its own, this works wonders in cocktails too. We think its great in an Espresso Chocolate Martinis or replace the bourbon for a Chocolate Manhattan!

The spirit is produced using a proprietary blend of pot and column still spirit, married in stainless steel to create a smooth white rum that’s as good served on the rocks as it is showcased in a jungle daiquiri…. It’s ideal for cocktail crafting.

Covert Liqueur

Covert Liqueur is a deeply melodic spirit – it is intricately crafted with three aromatic ingredients: fig leaves, cognac and honey.

Audemus harvest their fig leaves from southeast and southwest France at the peak of their aromatic potential. They are dried onsite, and then brought back to the distillery where they are roasted in an oven and left to macerate in alcohol.

This dry base spirit is then combined with honey and cognac, and left to rest for a certain time before being filtered and bottled.

With notes of jammed fig, grilled almond and rye, this liqueur can be savoured neat, on ice or in cocktails alike.

Downton Abbey Gin

Tom Nichol is the master distiller for this gin. The gin is made using only the finest fresh botanicals and Harrogate spring water from North Yorkshire right in the heart of ‘Downton Abbey Country’.

The botanicals are handpicked from the 750-year old gardens at the Ripley Castle Estate. Fresh limes, ginger root from the Victorian hothouse and English rose water come together to make this gin a drink of true character and distinction.

Fresh, virulent English rhubarb, hand-picked from the 750-year old gardens of the historic and beautiful Ripley Castle Estate, is cut with fresh bittersweet limes and pungent ginger root from the Victorian Hothouse, melded with English rose water.

Dragon Whisky (8yr)

The 8YO Dragon Whisky, the world’s first all Asian blended whisky with whiskies from the award-winning regions of Japan, Taiwan and India, aged a minimum of 8 years in bourbon then finished in Oloroso sherry wood.

This whisky has a deep and warm amber colour. It has a rich and luscious flavour; dried dates, fresh red fruits and a touch of dark chocolate gives it a sensual and indulgent feel. The nose contains notes of vanilla, raisin, apricot, sherry and hints of spice and smoke.

Developed in partnership with an experienced mixologist, Godet have sought to create the perfect cognac for bartenders. With a shorter ageing period of three years, No. 1 features less tannin than other expressions and is free from added sugar and caramel.
