Double distillation of sugarcane juice, use of exclusively full-bodied pot still distillation, and ageing in American Oak used bourbon barrels creates a rich sweet rum that tastes delicious neat and is a powerful and flavourful base for your favourite rum cocktail.

For Copalli Cacao Rum, handpicked, organic cacao is roasted on site. These cacao nibs are infused in unaged column-still rum, bringing richness to the white rum, true to style…. no added sweeteners or additives are necessary.

Perfect to savour on its own, this works wonders in cocktails too. We think its great in an Espresso Chocolate Martinis or replace the bourbon for a Chocolate Manhattan!

Covert Liqueur

Covert Liqueur

Covert Liqueur is a deeply melodic spirit – it is intricately crafted with three aromatic ingredients: fig leaves, cognac and honey.

Audemus harvest their fig leaves from southeast and southwest France at the peak of their aromatic potential. They are dried onsite, and then brought back to the distillery where they are roasted in an oven and left to macerate in alcohol.

This dry base spirit is then combined with honey and cognac, and left to rest for a certain time before being filtered and bottled.

With notes of jammed fig, grilled almond and rye, this liqueur can be savoured neat, on ice or in cocktails alike.
