Made from made with 100% wild Tobala (Agave Potatorum), cooked in a conical earth oven with mesquite wood for 4 days then milled with a volcanic Tahona before being distilled in small 250L copper pot stills.  This is a Joven (un-aged) Mezcal, bottled in small batches at source.

    AROMA
    Alluring perfume of white flowers, tropical fruit (melon) and some mineral notes.

    TASTE
    Silky combination of roasted agave, floral notes and subtle wet earth.

    FINISH
    Balanced and complex with cooked fruit, wood spice and gentle BBQ smoke.

    Covert Liqueur

    Covert Liqueur

    Covert Liqueur is a deeply melodic spirit – it is intricately crafted with three aromatic ingredients: fig leaves, cognac and honey.

    Audemus harvest their fig leaves from southeast and southwest France at the peak of their aromatic potential. They are dried onsite, and then brought back to the distillery where they are roasted in an oven and left to macerate in alcohol.

    This dry base spirit is then combined with honey and cognac, and left to rest for a certain time before being filtered and bottled.

    With notes of jammed fig, grilled almond and rye, this liqueur can be savoured neat, on ice or in cocktails alike.

    Downpour Coast & Croft Gin

    Inspired by wild sea botanicals and small Hebridean crofts, Downpour Coast & Croft is made with hand gathered island botanicals that you can taste in every drop. 

    Pepper dulse seaweed is harvested from North Uist’s rocky shores at low tide and distilled into a concentrate before being blended with a distillate of specially selected botanicals, including hand-picked wild thyme. Each batch is named after the part of the island the seaweed is harvested from.

    This expression has fresh green herb tones which lead on the nose with a rich base of juniper. On the palate, citrus and that wonderfully moreish umami of pepper dulse create a finish that is long and elegant.

    This one has a big bold taste of freshly zested pink grapefruits. Juicy pink peppercorns pair with the bright citrus notes to finish.

    Downpour Scottish Dry Gin

    Downpour Scottish Dry Gin is the flagship expression from North Uist Distillery. Named ‘Spirit of the Year’ at the 2023 London Spirits Competition.

    Downpour Scottish Dry Gin is made using twice the concentration by weight of botanicals compared to the industry average, resulting in a stronger’ Downpour’ of flavour.

    This expression is a big, bold, citrus forward gin with long spiced notes to finish. Wild Hebridean heather gives an overall honeyed note to this deliciously smooth gin, with each batch named after the place on the island the heather was collected from.

    Downpour Sloe & Bramble Gin

    Delicious sloe berries & hand gathered Uist brambles are added to Downpour Scottish Dry Gin before being aged in bourbon casks for an unmistakable finish that delivers complex & rich fruity flavours.

    A slow sloe gin. We soak the sloes in alcohol for up to a year, allowing the stone to impart marzipan notes. Each batch is named after the area of the island that the brambles are gathered.

    TASTING NOTES-Rich, jammy, fruit cake flavours. The ageing in bourbon casks adds vanilla notes. Less sweet than a traditional sloe gin so can be paired with a mixer or sipped neat
