You might think it’s damaging to locate an industrial distillery
(and Southern Belize’s largest employer) in a rainforest, wouldn’t
you? Not if you are Copal Tree Distillery.
Born out of a shared passion for the rainforest and conservation,
the Copal Tree Estate is a centre of excellence in sustainability.
The organic 3000 acre farm is located in the Belizean rainforest
and grows sugarcane, cacao and coffee. The Distillery built in
2016 is zero impact on the environment; powered by sustainable
biomass generated from the sugarcane fields themselves. All
waste from production is converted into agricultural inputs, even
drinking-quality water flows from the plant’s waste back into the
environment.
There is nothing to hide about Copalli Rum. Homegrown organic
heirloom sugarcane, pure rainforest canopy water plus organic
local yeast combine to produce a range of delicious and
flavourful, single estate organic rums which are fermented,
distilled, aged and bottled on site. They even prioritise
processing less efficient and a lower yield hand cut sugarcane in
favour of richer and more complex taste profile.
