Tidal Rum

Tidal coastal rum is a beautifully complex and refined blend of Caribbean rums, balanced with deep truffle flavours from oak-smoked pepper dulse seaweed, also known as the ‘Truffle of the sea’.

Crafted from a blend of rums distilled in Jamaica, Barbados, Trinidad and the Dominican Republic, each aged in ex-bourbon white oak casks for between two and three years. In Jersey, the blend is enhanced with an infusion of oak-smoked pepper dulse seaweed adding a deep, earthy truffle taste, balancing the tropical and dried fruit flavours of the rums.

Tidal is a lighter, more refined rum. A rum for the first drink of the night…. with soda and a slice of lime to make the spirit sing.

Named for one of the famed Three Colla brothers who once ruled ancient Ireland. UAIS (sounds like Oosh), is a whiskey that honours the past but moves in bold new directions. A triple blend which fuses three types of Irish whiskey in perfect harmony; 25% Pot Still, 25% Single Malt and 50% Grain whiskey. Then left to age in ex-bourbon & virgin oak casks.

With sustainability at the heart of Ahascragh Distillery, the bottle and paper label is made from 100% recycled materials, the stopper is made from sustainable wood and the seal is made from a biodegradable vegetable-based material.

Tasting notes: On the nose, heavy malty tones give way to rich biscuit and vanilla. The taste is sweet dried fruits and a warming pot-still spice. The finish is sweet and fudgy with lots of vanilla and a light chewiness.

Umami Gin

As the name suggests, this gin is named after the fifth taste or “savouriness”.

The base flavour for this spirit comes from South Italian capers. Audemus Spirits source these capers directly from a grower cooperative and distill them at 45 degrees to maintain their fresh aroma.

The glutamate molecule is responsible for our tongues ability to taste umami. The distillery achieves this flavour by combining a glutamate-rich infusion of parmesan with the caper distillate…and two other secret ingredients. The blend then rests in an old cognac barrel for several months. The result is a lightly savoury spirit with an entirely unique flavour profile.
